This warm ham and potato salad is made even more wonderful with fresh green beans!

Ingredients

Scale
  • 1 pound baby potatoes, scrubbed and cut into halves or quarters
  • 1/2 pound fresh green beans, trimmed
  • 1/2 pound ham steak, cut into bite sized cubes
  • 1/2 cup olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon mustard
  • 1 tablespoon mayonnaise
  • Pinch each of salt and pepper

Instructions

  1. Bring a large pot of water to a boil. Add potatoes and boil for 8 minutes.
  2. Add green beans to the pot and continue boiling for another 3 minutes.
  3. Drain the veggies and run a little cool water over them to take a little of the heat off.
  4. Add the veggies to a large bowl, and add ham.
  5. Make the dressing by mixing together all remaining ingredients, either by hand with a whisk or in a small food processor. Add to the bowl and with clean hands, mix everything gently together and serve!
