- 8 ounces sushi-grade tuna, cut into small cubes
- 2 sliced scallions
- 1 large tomato, chopped
- 1 tablespoon chopped fresh parsley
- 1 tablespoon grated fresh ginger
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 English cucumber, sliced diagonally into 1/4 inch thick rounds
- Place the tuna, scallions, tomatoes, parsley, ginger, soy sauce and sesame oil in a bowl and mix gently.
- Put the cucumber slices on one of your prettiest plates, pile a generous tablespoon of the tuna mixture on each cucumber slice and serve immediately.
