Tomato Peach Salad

This tomato peach salad recipe brings together two of the best tastes of summer! An easy vinaigrette and some mint make this a great summer side dish.

Ingredients

  • 2 large peaches, pitted and sliced (leave the skin on)
  • 2 large heirloom tomatoes, sliced
  • 1 tablespoon sherry vinegar
  • 2 tablespoons olive oil
  • Pinch each of salt and pepper
  • Mint leaves for garnish

Instructions

  1. You can either put the sliced peaches and tomatoes in a bowl together, or you can arrange them on salad plates if you want to be extra fancy.
  2. Put the vinegar, oil, salt and pepper in a little jar and shake vigorously until well mixed.
  3. Drizzle the vinaigrette over the salad. Scatter some mint leaves on top and serve.
