This aromatic recipe for spiced red wine beef stew is perfect for a frosty Sunday evening supper. Full of rich flavors and just right for the holidays!

Ingredients

  • 2 slices bacon
  • 1 large sweet onion, peeled and quartered
  • 6 carrots, peeled and cut into 2 inch pieces
  • 1/2 cup flour
  • Pinch each of salt and pepper
  • 2 pounds beef chuck steak cut into one inch cubes
  • 3 tablespoons olive oil
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups chicken broth
  • 2 cups red wine
  • 2 tablespoons brown sugar
  • 2 tablespoons balsamic vinegar
  • Chopped fresh parsley, for garnish

Instructions

  1. Put bacon, onion and carrots into a food processor and pulse until everything is finely chopped.
  2. Put flour in a bowl with a pinch each of salt and pepper and stir.  Add beef and stir until coated with flour.
  3. Put the olive oil in a large Dutch oven or other heavy pot and heat over medium high.  Add beef and cook until browned.  Scoop out and set aside.
  4. Add bacon mixture to the pot along with the cinnamon, cloves and nutmeg.  Saute until vegetables are starting to soften, about 3 minutes.
  5. Add chicken broth, wine, brown sugar and vinegar to the pot and bring to a simmer.  Add beef, stir everything up and bring to a low simmer.  Partially cover the pot and cook over low heat until the meat is tender, about 2 hours or so, stirring every once in a while.
  6. Season to taste with more salt and pepper if needed and serve garnished with parsley.
