Shrimp and avocado make delicious music together in this easy summertime shrimp avocado salad recipe! Ready in less than 30 minutes.


  • 1/2 pound shrimp, peeled and deveined
  • 1 medium avocado, peeled and cut into bite sized pieces
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cashews, roughly chopped
  • 1 lime, zested and juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


  1. Cook the shrimp by simmering them for about 3 minutes.  Drain and run them under cold water until they are cool, then cut them into bite-sized pieces.
  2. Place shrimp, avocado, tomatoes and cashews in a large bowl. With clean hands, gently mix until combined.
  3. Add lime zest and juice and olive oil and gently mix again. Season to taste with salt and pepper. Serve, garnished with parsley.
