This easy appetizer pairs prosciutto, goat cheese and fig jam in a perfect blend of tastes! Prosciutto cheese rolls are just right for your next party.

Ingredients

Scale
  • 2 tbsp. olive oil
  • 2 tsp. grated lemon zest
  • 1 tbsp. fresh lemon juice
  • 6 oz. soft goat cheese, at room temperature
  • 1 clove garlic, peeled and minced
  • 12 slices (not paper-thin) prosciutto, halved crosswise
  • 1/2 cup fig preserves
  • Your choice of fresh greens (arugula, frisee lettuce, fresh oregano, fresh basil, etc.
  • Freshly ground black pepper

Instructions

  1. Whisk oil, lemon zest, and lemon juice together in a small bowl and set aside. Mix goat cheese and garlic together in another small bowl and set aside.
  2. Spread a thin layer of the goat cheese mixture on each piece of prosciutto, spread a thin layer of fig preserves over cheese, and top with a few greens.
  3. Drizzle with some of the lemon vinaigrette and season to taste with pepper.
  4. Roll prosciutto up around filling and cut them in half.  Arrange on serving platter, seam side down. Garnish with fresh herbs if desired.

Notes

    • Prosciutto: This cured pork is fully cooked, so all you have to do with it is buy it! You can find it pre-packaged in your supermarket, and also at the deli department. I usually go to the deli so I can get exactly the amount I need!

    • Fig Jam: Sometimes this delectable jam is in with the other jams, and sometimes it is with the fancy cheeses. If you can’t find fig jam you can use apricot or peach.

    • Greens: Any type of small greens will work – we like basil, but you can use microgreens, small arugula or frisee leaves or even mint!
