These open-faced tomato sandwiches combine sweet tomatoes, salty feta cheese and crusty country bread…simple and delicious!

Ingredients

Scale
  • 2 slices country bread
  • 1 local tomato, sliced thickly
  • Sliced feta cheese
  • Coarse salt and fresh ground pepper
  • Fresh thyme
  • Olive oil

Instructions

  1. Toast the bread and then rizzle the toasted bread with olive oil.
  2. Layer a couple of tomato slices on each piece of bread. Top with feta cheese.
  3. Sprinkle with salt, pepper and fresh thyme. Drizzle with a little more olive oil.
  4. Enjoy!

Notes

    • Tomatoes: If you can capture an heirloom tomato for this recipe, that is the very best. Otherwise a big beefsteak tomato will work.

    • Feta Cheese: Look for this tangy sheep’s milk cheese in the cheese section (usually where they keep the fancy cheese). You are looking for the block, not the crumbles.
