Lime and Ginger Steak

This recipe for lime and ginger marinated flank steak is a great way to kick off grilling season!

Ingredients

  • 1 to 1 1/2 pound flank steak
  • 4 limes, juiced (save the rinds) plus one more for garnish
  • 1/2 cup olive oil
  • 1 bulb fresh ginger, cut into slices or chunks
  • 4 scallions, sliced
  • 1 teaspoon coarse salt
  • 1/2 teaspoon fresh ground pepper

Instructions

  1. Combine lime juice plus the rinds, oil, ginger, scallions and salt and pepper in a large zippered plastic bag. Add steak, seal the bag and marinate in the fridge for an hour or two, turning the bag occasionally.
  2. Heat grill to high. Take out steak, discarding marinade, and grill for 3-4 minutes per side for medium rare.
  3. Let the steak rest on a cutting board for 5 minutes, covering it with foil to keep it warm.
  4. Slice against the grain into thin slices and serve with extra lime wedges on the side.
