Horseradish Asparagus Roast Beef Roll-Ups

Roll up some asparagus in a roast beef and some horseradish cream cheese for an instant elegant appetizer. Hurray for roast beef roll-ups!

Ingredients

  • 12 asparagus spears, trimmed to 4 inches long
  • 1 cup whipped cream cheese
  • 2-3 tablespoons horseradish
  • 12 thin slices rare roast beef
  • 1 scallion, chopped (optional)

Instructions

  1. Bring a pot of water to a boil and cook asparagus until crisp-tender, 2-3 minutes depending upon how thick it is. Immediately transfer the asparagus to a bowl of ice water to cool them, then dry them on paper towels.
  2. Mix together the cream cheese and the horseradish, using more or less horseradish depending upon how spicy you like things!
  3. Spread each slice of roast beef carefully with the cream cheese mixture. Place an asparagus spear at the end of each one and roll them up.
  4. Arrange on a pretty platter, sprinkle with scallions and serve!

Notes

  • Asparagus: The thicker asparagus work best for this recipe, although any kind will do.
  • Cream Cheese: We find that whipped cream cheese is the best texture for this recipe, but you can use regular cream cheese as well..bring it to room temperature first for easiest spreading.
  • Roast Beef: This is the time to get the good stuff from the deli counter! As for it to be sliced thinly.
  • Horseradish: This spicy root vegetable is from the mustard family, and is usually available grated and jarred with vinegar. Look for it in the condiments aisle.
