This incredibly easy recipe for blue cheese and fig jam crostini makes a perfect flavorful appetizer, or even a light lunch or supper.

Ingredients

  • 24 thin slices baguette (from 1 small loaf)
  • 2 tablespoons olive oil
  • 3/4 cup fig jam
  • 4 ounces blue cheese, thinly sliced

Instructions

  1. Heat oven to 400° F.
  2. Place the baguette slices on a baking sheet lined with parchment or a silicone mat and brush both sides of the bread with the oil. Bake until just crisp, about 10 minutes.
  3. Spread the jam on the toasts and top with the cheese.  And you’ve made crostini!

Notes

  • French Bread: Also known as a baguette, this bread is the perfect shape and size for crostini. Look for it in the bakery section of your supermarket.
  • Jam: We do love fig jam for this recipe, but you can also use peach or apricot jam and it will be scrumptious!
  • Blue Cheese: Blue cheese comes in various varieties from mild to sharp – use whatever you like best! And look for it in the specialty cheese section of your supermarket.
