Bacon Tortellini Alfredo

This easy recipe for bacon tortellini Alfredo takes the classic Fettuccine Alfredo recipe and adds crispy bacon and tender tortellini for a quick dinner party worthy main course!

 

Ingredients

  • ½ pound bacon, cut into one inch pieces
  • 12 ounces refrigerated cheese tortellini
  • 1 cup heavy cream
  • 3 tablespoons butter
  • 1 cup finely grated Parmesan cheese
  • ½ cup chopped parsley

Instructions

  1. Cook a half pound of chopped bacon slices in a large skillet until crispy. Scoop out the bacon with a slotted spoon, leaving the drippings in the pan.
  2. Cook 12 ounces of refrigerated cheese tortellini in salted boiling water according to package directions (usually about 3 minutes). Drain and set aside.
  3. Add a cup of cream and 3 tablespoons of butter to the skillet with the bacon drippings. Bring to a simmer and stir until the butter is melted and the cream is just bubbling. Stir in one cup of grated Parmesan cheese.
  4. Add the cooked tortellini, the cooked bacon and a half cup or so of chopped parsley to the skillet. Gently mix together with tongs, and then serve it up!
