  • 1 slice white bread
  • 10 ounces linguine
  • 1 4 ounce package log-shaped goat cheese
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 3 cups chopped plum tomatoes
  • 1/4 cup white wine
  • 1 teaspoon red pepper flakes
  • 1/2 pound shrimp, peeled
  • 1/2 teaspoon salt
  • 1/2 cup thinly sliced basil or little basil leaves

Instructions

  1. Preheat oven to 400.
  2. Pulse bread in food processor to fine crumbs. Spread on baking sheet and bake until golden, about 10 minutes. Transfer to plate and let cool.
  3. Cook linguine according to package directions.  Scoop out a cup of pasta water before you drain it, then drain and set aside.
  4. Slice goat cheese into 4 rounds. Press each round into crumbs until coated. Bake at 400 for 10 minutes.
  5. Meanwhile, heat oil in skillet over medium heat. Add onion and saute for 5 minutes. Stir in tomato, wine and pepper and cook 15 minutes, stirring occasionally.
  6. Add shrimp and salt, cook 4 more minutes or until shrimp are done.
  7. Add cooked pasta and basil to tomato sauce and toss to combine.
  8. Divide pasta mixture among plates, top each with a goat cheese round and serve!
