The Best Breakfast Ramen

Move your favorite lunch noodles earlier in the day with this speedy recipe for the best breakfast ramen you’ve ever tasted!

Ingredients

  • 2 three ounce packages chicken flavored ramen with flavor packet
  • 4 slices bacon, chopped
  • 4 eggs
  • 1 cup milk
  • 1 cup shredded cheddar

Instructions

  1. Cook ramen according to package directions, but don’t add the flavor packet. Drain and rinse with cool water to stop the cooking.
  2. Cook bacon in a large deep skillet until crisp. Scoop out and drain on paper towels, leaving the drippings in the skillet.
  3. Whisk the eggs, the milk, the cheese and the flavor packet together and add to the skillet. Pour in the noodles and toss until the eggs are just set and take off the heat.
  4. Divide among two bowls, scatter bacon on top and serve!

Notes

 

Ramen: These addictive squiggly noodles cook up in about three minutes, and can be found in the soup aisle of your supermarket.

Bacon: We love thick-cut bacon for this recipe, but you can use whatever you have on hand (yes, even turkey bacon!)

Cheese: Shredded cheddar is our favorite for this ramen, but any melty cheese will work – Monterey Jack, Swiss and so on.
