This easy recipe for chicken shepherd’s pie converts the classic lamb supper to a lighter chicken version. Comfort food to the max!
Okay, so this is definitely NOT your grandmother’s tuna casserole. Yes, there is tuna, and yes, there are noodles. But there are also artichoke hearts and there is also feta cheese, and there is absolutely no cream-of-anything soup. It’s light and flavorful with the perfect mixture of cheese and artichoke and just the right amount of pasta. I’m calling it a Mediterranean version because of the feta and artichokes, but you can also call it scrumptious…let’s make it!
Before I get into the deliciousness that is this recipe for roasted tomatoes with shrimp and feta, I have to say this: Ah, Fall. The days are shorter, the air is crisp and clean-smelling. We’ve used the fireplace for the first time, and I’ve gotten out all my cozy sweaters. It’s the perfect time to have an warm and easy supper that is rich with the flavors of sweet tomatoes and tangy feta and tender shrimp. Ready for one of my favorite seafood suppers? Let’s make it!
I’m guessing it’s not often that the folks around your supper table ask for seconds of vegetables (unless mashed potatoes are involved, and then all bets are off) but that is all about to change with this recipe for easy, hearty, cheesy cauliflower casserole. Full of tender cauliflower and baked in a creamy, dreamy cheese sauce, it gives a macaroni and cheese vibe but with vegetable goodness. And while it is the perfect side for grilled chicken or steak, in my house it as has also been eaten all by its gorgeous self, because I’m here to tell you that this is one of the times that the vegetable is going to take center stage. Let’s make it!
Right about now you are probably smack in the middle of a Thanksgiving whirlwind, or you know somebody who is. The turkey is thawing or brining, the pumpkin pies are baking, you are searching for that cornbread stuffing you know you have somewhere, and you’re sending someone to the store to pick up the marshmallows you forgot to get for the top of the sweet potato casserole.
Picture this with me, please. The world’s best grilled cheese sandwich, cooked to perfection with lots of creamy melted cheese, just the right amount of sweet tomato, all gathered between soft country bread that has been cooked to just the right amount of toasty goodness. We’ve all been there, right? Now take all that deliciousness and imagine it for supper, but not as a sandwich. Nope, imagine it as a casserole, full of grilled cheese sandwich wonderfulness, but bubbling away in your oven. I know. I know!!
