Does anyone else automatically raise their hand when the word “fritter” is spoken? As in, YES I WOULD LIKE SOME OF THOSE FRITTERS PLEASE!” Personally, I’ve never met a fritter I didn’t like, from apple fritters to corn fritters, but until I made these clam fritters it didn’t actually occur to me that I could fritter something into an actual main course. As in, we are having fritters for dinner tonight, honey. I promise you right here and now that those eight words will get the table set faster than you can say fritter. And these clam fritters take almost as little time to fritter up.
This is one of what I call my secret weapon recipes. Secret weapon recipes are those recipes that you can completely, totally, 1000% rely on to work Every Single Times, and that are also a little bit different and a whole lot of delicious. I count my scrambled eggs with ricotta and chives in this category, as well as my recipe for naked ravioli and my beloved Blue Dory cookie recipe too. These delectable muffins are the muffin version of my secret weapon recipe, and let’s just say that the first time I made them, the Southern husband ate all of them. In one day. A full muffin recipe, gone just like that. It was both alarming and highly satisfying all at the same time…and here’s how it’s done.
Out of all the many many recipes in my towering pile of books and binders and scraps of paper, these banana muffins are the ones the Southern daughter requests the most. And conveniently, it’s also one that I am most happy to make whenever she asks, because they are fast and fabulous…only 5 ingredients that pretty much just get mixed together and baked, and twenty minutes later you have light and perfect muffins that have just the right amount of banana flavor. They are also the world’s best way of using up these.
