This easy recipe for eggs with creamy bacon grits tops buttery, bacon-studded grits with soft-cooked eggs for the ultimate Southern comfort-food breakfast!

Some days call for a salad, and some days call for a warm bowl of eggs with creamy bacon grits. You know the kind—the rainy, cranky, upside-down days when only buttery grits, crispy bacon and a soft-cooked egg with a runny golden yolk will do.

This easy Southern comfort-food recipe is equally wonderful for breakfast, brunch or my personal favorite, breakfast for dinner. Break into that tender egg, let the yolk swirl into the creamy bacon-studded grits and watch everything start to feel right with the world again. 🥓🍳

If you haven’t yet discovered the wonder of grits, think polenta with a little more texture and the same delicious corn flavor. My very favorites are the fabulous Anson Mills pencil cob grits, which are hearty, creamy and all kinds of wonderful.

As for the eggs, poached, gently fried or soft-boiled will all work—the important part is keeping that yolk soft enough to melt into the grits. Here is my foolproof way to poach an egg, and here is the perfect way to fry an egg!

🤔 What are grits?

Grits are a classic Southern dish made from dried, ground corn that is simmered in water, milk or broth until soft and creamy. They come in several varieties, including hearty stone-ground grits, speedier quick-cooking grits and precooked instant grits.

For this recipe, I recommend stone-ground grits because they have the best corn flavor and a wonderfully substantial texture. Grits are similar to polenta, but they are traditionally made with a different variety of corn and tend to have a softer, creamier consistency. Whichever kind you use, check the package directions for the correct amount of liquid and cooking time.

  • Eggs: You can prepare your eggs any way you like! I usually go for either poached eggs or gently fried eggs. Whichever method you choose, keep the yolks soft so they can melt deliciously into the grits.
  • Bacon: Thick-cut bacon gives this recipe an especially hearty texture, but regular, center-cut or turkey bacon will also work.
  • Grits: Stone-ground grits give you the best flavor and texture, but quick-cooking grits are fine when time is short. Follow the package directions for the correct amount of liquid and cooking time, and skip instant grits if possible.
  • Butter: Salted or unsalted butter will work. Taste the finished grits before adding extra salt, since the bacon already brings plenty of salty flavor.

STEP 1: Cook the bacon in a skillet over medium heat until it is crispy. Transfer it to a paper towel-lined plate and set it aside.

STEP 2: Prepare the grits according to the package directions, stirring occasionally, until they are tender and creamy. Stone-ground grits usually take about 45 minutes, while quick-cooking grits will be ready sooner. Stir in the butter, then taste and season with salt and freshly ground pepper.

STEP 3: Reserve a little of the crumbled bacon for topping, then stir the rest into the warm grits until it is evenly distributed. Keep the grits warm over low heat, adding a splash of water if they become too thick. 🥓

STEP 4: Cook the eggs using your favorite method. We love poached eggs for this recipe, but gently fried or soft-boiled eggs will also work. Keep those yolks nice and soft!

STEP 5: Divide the creamy bacon grits between two bowls and nestle the eggs on top. Sprinkle with the reserved bacon and a little freshly ground pepper. Serve immediately and let everyone break into those golden yolks themselves!

Absolutely! Quick-cooking grits will give you a slightly smoother texture than stone-ground grits, but they are a great option when you need breakfast in a hurry. Follow the package directions for the correct amount of liquid and cooking time.

What can I do with leftover grits?

Our favorite thing to do is stir in some shredded cheese, refrigerate the grits until they are firm and turn them into these scrumptious cheesy grit cakes!

Can I make grits ahead of time?

Yes. Cook the grits and bacon, let them cool and store them in a covered container in the refrigerator for up to three days. Reheat them gently on the stovetop, stirring in a splash of water or milk to loosen them up. Cook the eggs just before serving.

  • 4 slices bacon, cut into one inch pieces
  • 1 cup grits
  • 2 tablespoons butter
  • Salt and pepper
  • 4 eggs, soft cooked your favorite way (poached, fried or soft-boiled)

Instructions

  1. Cook the bacon until it is crispy and set aside.
  2. Prepare grits according to package directions. Grits usually take about 45 minutes to cook to their best consistency.
  3. Stir the butter into the grits until it is fully melted. Taste and season with salt and fresh ground pepper as needed.
  4. Reserve a little of the crumbled bacon and stir the rest into the grits until evenly distributed.
  5. Let the grits set while you cook up your eggs…we like this dish with poached eggs (and here is the perfect way to make them!) but soft boiled or fried eggs will work too!
  6. Divide the grits between bowls. Nestle the eggs into the grits and sprinkle with reserved bacon. Just before serving, break into each egg so the yolk melts down into the grits, and grind a little more fresh pepper on top. Enjoy at once!

Notes

  • Eggs: You can prepare your eggs any old way you like! I always go for either poached eggs or gently fried eggs because the creamy yolk is part of the wonder of this recipe, but you be you, egg-wise!
  • Bacon: We love thick cut bacon for this recipe, but any kind will do.
  • Grits: You can find grits in the breakfast aisle of your supermarket near the oatmeal. Grits come in all varieties from instant to coarse. We like the stone ground variety – they take longer to cook but have an awesome hearty texture.
