This speedy, frosty recipe for a watermelon lemon frosé cocktail is a grown-up version of a perfect summertime slushie, full of fruit flavor and rosé wine!
Yes, I know this is my second beverage recipe in a row, but my friends, it is HOT out there. I have only been a North Carolina resident for less than a month, and I am already an expert on hydration.
Meanwhile back in New Jersey, I don’t know WHAT is happening with the weather. Here was the scene on my mama’s back deck the other day…
Those are the chunks of ice from the hailstorm they got up there. IN JULY. Please send healing thoughts to her sweet little plants…ouch.
Meanwhile back in North Carolina, here is my 284,249th update on the Dream House Progress…we have carpet!
Most of the house has hardwood floors, but there are a few rooms where we went for carpeting, including the media room where I expect there will be lots of jumping up and down when football season revs up again.
In other news, the garage is looking spiffy. Some people are more jazzed by that than others.
Whatever your reason (new carpet, crazy weather, heat and humidity, brand new circuit breaker boxes) I recommend celebrating with a frosty cold glass of watermelon lemon rosé!
Here’s how you make watermelon lemon rosé!
You do have to plan ahead for this one, as one of the key ingredients is frozen chunks of fresh watermelon.
And pro tip: the frozen watermelon will be a lot easier to handle if you put it in a single layer on a cookie sheet lined with a silicone mat or parchment paper before you freeze it.
When cocktail hour rolls around, make a simple syrup by putting the sugar and water together in a small pot and stirring over medium high heat until the sugar is totally dissolved.
Next, put the simple syrup, juice from one lemon (and by the way, here is my favorite lemon juicer on the planet. The Southern daughter did not have one, and that was the first thing I bought for her kitchen when we moved in), watermelon and wine in a blender and puree until smooth.
You might have to do this in two batches (just divide all the ingredients in half) depending on the size of your blender.
Last but most definitely not least, pour it all into glasses, pop a little lemon zest on top and pass them around!
Stay cool out there everyone,
Love, Kate
