The Very Best Cheese Fries

This easy recipe for the very best cheese fries uses Velveeta to make a super creamy sauce that is perfect for this favorite side dish!

Hi my friends!  How is everyone doing out there?  I know it is a crazy, nerve-wracking time we are all going through, and while in my house we are doing our best to stay busy and thankful for all the blessings we still have, I sure do miss this.

I saw my little brother yesterday, from a responsible 6 feet away, and it was the strangest thing not to be able to throw my arms around him the way I am doing in that picture up there.

(Note my adorable nephew waiting his turn for me to smoosh him in his own hug.  Miss him so much.)

Anyway, we are all trying our best to do the things we still can do that keep us busy and calm.  For me, that’s this…

…and cooking.  I know lots of you are now cooking more than you ever have, and I’m betting a lot of it is comfort foods.

So I am bringing you one of the most satisfying, naughtiest comfort foods I know, and that is cheese fries!

How do you make cheese fries from scratch?

Start by procuring a bag of your favorite variety of frozen fries.  We like the rippled kind that catches the cheese in all the nooks and crannies, but you can do any kind you like (including Tater Tots which adds a whole ‘nother level of decadence!).

Cook them up according to package directions (we going with the baking option rather than frying) and while they are cooking, whip up the creamy, dreamy cheese sauce.

You need a hunk of Velveeta for this.  I’m as big a fan of cheddar as the next girl, but regular cheese doesn’t give you the creaminess that good old Velveeta does.  And these times call for cheesy creaminess.

Melt up a little bit of butter and flour, and add some half and half.  When you have all that simmering, add the Velveeta.  Stir it all up until it is smooth and melty.

Now pile those fries on to a platter or bowl and pour that cheese sauce over them.

Use every drop, and try and get to those fries at the bottom of the pile as best you can.

Now, while these are great with a burger, I will completely understand if at some point you choose to have a bowl of cheese fries for supper and nothing else.

Description

This easy recipe for the very best cheese fries uses Velveeta to make a super creamy sauce that is perfect for this favorite side dish! 


Ingredients

  • 4 cups frozen French fries (your choice of style)
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1/2 cup half and half
  • 3/4 cup cubed Velveeta

Instructions

  1. Prepare the fries according to package directions.
  2. While the fries are cooking, make the cheese sauce: Melt the butter in a medium saucepan over medium heat. Stir in flour until well combined.
  3. Whisk in half and half and bring the mixture to a boil. Stir in cheese and keep stirring until it is melted and smooth.
  4. Place fries on a platter or individual plates. Pour cheese sauce over the top and dig in!

    Mmmmmm! Cheesy fries! And to make this more of a meal, just add crispy bacon bits and some green onion. Then you basically have meat, potatoes and salad! :)
