Roasted Salmon With Avocado Salsa

Jazz up your seafood supper with this quick and easy recipe for roasted salmon with avocado salsa. A colorful and deliciously healthy dinner!

I have been a parade of Tater Tots and ramen lately, so I figured it was high time I kept up with the delicious but with a little more healthiness.  And one of our go-to ingredients for healthy deliciousness in our house is always salmon.

Salmon is one of the most reliable fishies I know in terms of being quick and easy to cook, and my favorite way to cook it up is in the oven.  All it takes is a brush of olive oil and a sprinkle of salt and pepper and 15 minutes later you have a lovely piece of perfectly cooked tender salmon.

However, salmon by itself – wonderful as it is – is just a little bit plain for me, and so I love coming up with new ways to jazz it up.  And this time it was the avocado’s turn!

Here’s how you make roasted salmon with avocado salsa!

Start by getting your hands on some salmon.  Wild-caught salmon is always your best bet if you can find it, and here’s a handy overview on all the different kinds of salmon out there.  I usually buy single portion pieces, but you can also just buy one big piece and cut it into portions.

Once you have your salmon, brush it with olive oil and sprinkle on some salt and pepper and pop it in the oven for 15 minutes – that’s all it takes to cook up perfectly.

While your salmon is roasting away, you can put together this quick little salsa – all you need to do is gently toss together some chopped avocado, cherry tomatoes, shallots and a drizzle of lime juice.  That’s it!

Once the salmon comes out of the oven, all you have to do is pop it on the plates and scatter this scrumptious salsa over the top.

I like to put some limes on the side for an extra squeeze if anyone needs one.

And with that, healthy delicious dinner is served!  And don’t worry, I’ll be back with something involving cheese next time.  :)

Description

Jazz up your seafood supper with this quick and easy recipe for roasted salmon with avocado salsa.  A colorful and deliciously healthy dinner!


Ingredients

  • 2 avocados, peeled and diced
  • 1 cup cherry tomatoes, cut into quarters
  • 1 shallot, peeled and chopped
  • Juice from ½ lime
  • ½ teaspoon sea salt
  • 1 tablespoon olive oil
  • 4 boneless salmon filets, 4-6 ounces each (see note)

Instructions

  1. Preheat oven to 450 degrees and line a rimmed baking sheet with nonstick foil or parchment paper.
  2. While the oven is preheating, combine the avocado, tomatoes, shallot, lime juice and sea salt in a small bowl.
  3. Place the salmon filets skin side down on the baking sheet (if they have a narrow end, tuck it under) and brush the top with olive oil.  Now roast until just done, about 15 minutes.
  4. Transfer the salmon to warmed plates, spoon the avocado salsa on top and serve!

Notes

You can also get one larger piece of salmon and cut it into pieces!
