Pumpkin Mashed Potatoes recipe

You know me, always happy to mess with a classic, because you never know what delicious things might happen!

In this case, I took a perfectly innocent bowl of homemade mashed potatoes and mixed them up with some pumpkin and cheese and you know what?

YUM!

Not that I am ever going to abandon traditional mashed potatoes, but this version just seems tailor-made for Thanksgiving (and I also think it would make an awesome topping for a turkey version of shepherd’s pie).

Here’s how you make pumpkin Mashed Potatoes!

Scrub 3 large Yukon Gold potatoes and cut them into even sized chunks. Put them in a pot, cover them up with water, bring the water to a boil and simmer them up until they are tender, about 15 minutes (a paring knife should slide in easily). Drain and put them back in the pot.

Add 6 tablespoons of butter and mash with a potato masher. Add a cup of warmed milk and mash again.

Stir in a cup of canned pumpkin and a cup of shredded Fontina cheese.  Taste and season as needed with salt and pepper and serve it up!

More tips for making Pumpkin Mashed Potatoes!

Don’t I have to peel the potatoes?

You can if you WANT to (and they will be smoother without the peel) but particularly with Yukon Gold potatoes, the peel adds both texture and extra fiber and vitamins…and it’s delicious!

Can I use a different kind of cheese?

Yep! Any cheese that melts pretty easily is a good choice – cheddar, Monterey Jack and Parmesan would all be delish.

Can I make this ahead of time?

Definitely! When it comes time to eat, cover it with foil and pop it in a 350 degree oven for about 15 minutes. Or, you can put it in a slow cooker on the Keep Warm setting for an hour or so.

One note to be sure to remember with this one – make sure you are getting a can of just plain pumpkin, because the plain pumpkin tends to sit right next to the can of pumpkin pie mix, and putting pumpkin pie mix into mashed potatoes is going a step too far, even for ME. Ha!
