Pasta with Tomato Sausage Sauce

This flavor-filled recipe for pasta with tomato sausage sauce is a supper that has something for everyone!


  • 2 tablespoons olive oil
  • 1 sweet onion, peeled and chopped
  • ¼ cup chopped fresh parsley, plus extra for garnish
  • 2 garlic cloves, peeled and chopped
  • 1 28  ounce can diced tomatoes, drained
  • 1 tablespoon oregano
  • 12 ounces of your favorite short pasta (penne, campanelle, etc)
  • 12 ounces cooked sausage, cut into small diced pieces
  • 2 tablespoons butter
  • 8 ounces fresh mozzarella, cut into small squares
  • Grated Parmesan cheese for garnish


  1. Heat the olive oil in a large skillet over medium high heat. Add the onion to the skillet and cook until the onion just starts to soften, about 2 to 3 minutes.
  2. Add the garlic, parsley, tomatoes and the oregano and let the whole thing simmer over medium heat for 10 minutes.
  3. While the sauce is simmering, cook the pasta according to package directions. Scoop out of cup of pasta water, drain the pasta and it to the skillet with the tomato sauce.  Drizzle in some of the reserved pasta water to make a light sauce.
  4. Add the sausage and butter and stir until it is heated through. Taste and season as needed with salt and pepper.
  5. Stir in the mozzarella , sprinkle with parsley (and grated Parmesan if you like!) and serve at once.
