This flavor-filled recipe for pasta with tomato sausage sauce is a supper that has something for everyone!

This hearty plate of pasta deliciousness is brought to you by a delicious conglomeration of chopped cooked sausage, canned tomatoes, chopped mozzarella, a few herbs and spices and some tender cooked pasta!
It’s a recipe that I tend to grab in the chillier months (although I fully support your right to eat this scrumptiousness all year ’round!) because this particular combo of ingredients is so hearty and warm, it just feels like the perfect chilly evening supper.
It’s also totally customizable in terms of the sausage part…you can use everything from spicy chorizo to a mild kielbasa.
I am currently hooked on this chicken apple sausage, but you be you, sausage-wise! Just make sure whatever kind you get is fully cooked (it will say that on the package.
Here’s how to make pasta with tomato sausage sauce!
Heat a couple tablespoons olive oil in a large skillet over medium high heat. Add a peeled and chopped sweet onion to the skillet and cook until the onion just starts to soften, about 2 to 3 minutes.
Add the a couple cloves of chopped garlic, a handful of chopped parsley, a drained 28 ounce can of tomatoes and a little oregano and let the whole thing simmer over medium heat for 10 minutes. (Your kitchen is about to smell DELICIOUS.)
While the sauce is simmering, cook 12 ounces of your favorite short pasta in salted water according to package directions. Scoop out of cup of pasta water, drain the pasta and it to the skillet with the tomato sauce. Drizzle in some of the reserved pasta water to make a light sauce.
Add 12 ounces of your favorite cooked and chopped sausage and a little butter and stir until it is heated through. Taste and season as needed with salt and pepper.
Stir in 8 ounces of chopped mozzarella , sprinkle with parsley and serve at once.

When pasta cooks, it releases starch into the water (that is what makes it a little cloudy. And since hopefully you have thoroughly salted your water, at the end of the pasta cooking time you have a starchy, salty water that is ABSOLUTELY PERFECT for making or loosening up a light pasta sauce. It’s truly magical.
Some sausage is sold uncooked (usually right in the meat section of your supermarket) but for this recipe we want fully cooked sausage. If you aren’t sure, look on the label – if it is fully cooked it will say so.
Ideally you will find a nice soft hunk of fresh mozzarella in your supermarket – that is the very best kind for this dish. But if you can’t, shredded mozzarella will do fine in a pinch.
Last but definitely not least, I do sometimes take this recipe over the top by sprinkling on some fresh grated parmesan cheese. Okay, I do that every time. I gotta be me.

- 1 sweet onion, peeled and chopped
- ¼ cup chopped fresh parsley, plus extra for garnish
- 2 garlic cloves, peeled and chopped
- 1 28 ounce can diced tomatoes, drained
- 1 tablespoon oregano
- 12 ounces of your favorite short pasta (penne, campanelle, etc)
- 12 ounces cooked sausage, cut into small diced pieces
- 2 tablespoons butter
- 8 ounces fresh mozzarella, cut into small squares
- Grated Parmesan cheese for garnish
Instructions
- Heat the olive oil in a large skillet over medium high heat. Add the onion to the skillet and cook until the onion just starts to soften, about 2 to 3 minutes.
- Add the garlic, parsley, tomatoes and the oregano and let the whole thing simmer over medium heat for 10 minutes.

- Stir in the mozzarella , sprinkle with parsley (and grated Parmesan if you like!) and serve at once.
