One Bowl Chicken Souvlaki

What’s better than chicken souvlaki? Chicken souvlaki all in one easy to make bowl recipe!  Welcome to your new favorite one bowl chicken dinner.

I love any recipe that has “one bowl” in the title, because it suggests that supper is going to be a conglomeration of delicious things that are going together fast in, yep, one bowl.  

Less dishes to wash, more wonderful things in one bite – what’s not to love?  Especially when we are talking about tangy, delicious chicken souvlaki.

Assuming you have some cooked chicken on hand (and I always have cooked chicken on hand) this comes together in 15 minutes with exactly zero cooking, which is excellent when you have days that make you feel like this…

I always throw an extra piece or two of chicken on the grill so I have it always on hand, and by me I mean the Southern husband, Grill Master Extraordinaire.

I should admit that back when I was first writing and testing this recipe, I sent the Southern husband out into the dead of winter to grill the chicken breasts so that they were conveniently all nice and cooked when I was ready to make dinner.

There he is back in our New Jersey digs, this time grilling tomatoes for another recipe I needed in the cold heart of January. (My honey. Neither rain nor snow nor dead of night will keep the man from his grill.)

Once you have some nice cooked chicken — and I cannot lie, the grilled variety makes this dish just perfection, although rotisserie chicken works great too — you are about 15 short minutes away from suppertime.

What Is Chicken Souvlaki?

Souvlaki is a Greek dish usually made with lamb, and usually cooked on skewers with a lovely yogurt sauce and some feta cheese and cucumbers and tomatoes, and eaten with pita bread.

But since I am all about the one bowl thing, I’m skipping the skewers but keeping the supporting cast of characters.

And speaking of those characters, if you happen to be in a energetic mood on the day this is on the menu, you can take this supper to the next level with this super easy recipe for grilled flatbread.

It’s so simple to make, and grills up to warm toasty perfection in no time.

Or you can use naan, or pita bread. You be you.

How to make one bowl chicken souvlaki

Start by shredding up that cooked chicken. When I do it, I like to shred it with a hand mixer, but the Southern husband is partial to using his Bear Paws Shredder Claws.

Chop up some cucumbers, some scallions and some cherry tomatoes and pop them in a mixing bowl with the chicken.

Now! Mix up some crumbled feta cheese (and here comes my pitch to buy a block of feta and crumble it yourself – it is SO much softer and tastier) with some plain yogurt.

You can do this by hand if you like a chunkier salad dressing (raises hand) or whirl it in your food processor if you like it smooth. One way or the other, stir in some oregano at the end.

Now pour that over your chicken mixture and give it all a good toss. Add some fresh chopped parsley and a nice grinding of black pepper and toss again.

I like to put a warmed piece of bread on the bottom and pile it on top, but you can add the bread any old way you please.

You’re done. You’re happy. And you still have the whole night in front of you!

Ingredients

  • 4 cups shredded cooked chicken
  • 2 large cucumbers, chopped
  • 2 scallions, chopped
  • 2 tablespoons capers
  • 1 pint cherry tomatoes, halved
  • 1/2 cup plain yogurt
  • 1/2 cup crumbled feta
  • 1 teaspoon oregano
  • Fresh ground black pepper
  • 1/2 cup chopped parsley
  • Pita bread (you could also use naan bread)

Instructions

  1. Combine chicken, cucumbers, scallions, capers and tomatoes in bowl.
  2. Mix up feta and yogurt — you can do this by hand if you like chunkier dressing or in a food processor if you like it smooth. Mix in the oregano.
  3. Pour dressing over chicken mixture and stir just to coat. Sprinkle with pepper and parsley and serve with pita bread.  You’re done!
