Hi friends and happy middle of October! Do you have your costume yet?
I have a great fall recipe line-up for you that includes recipes for some fall comfort food, including one of my favorite apple desserts.
If you want some color commentary on why I picked what I picked, it’s underneath this week’s recipe line-up…but first, here come the meals I picked for you this week!
As usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own favorites – or just do takeout!

Grandma’s Apple Brown Betty
This comfort food recipe for my grandma’s easy apple brown betty is a classic version of this homespun dessert made from apples, bread and spices. It’s the perfect fall treat!
And now for the color commentary!
First up, I have some Potato Skin Tacos for you. Yep, potato skins stuffed with taco and potato goodness…this is a football game favorite in my house!
My ode to pasta this week is Shrimp Fettuccine Alfredo. Just when I thought pasta with a cheesy buttery cream sauce couldn’t get better, it turns out when you add a little seafood it’s even more scrumptious!
Next up, just because I love it so so so much, is a Grilled Cheese Sandwich Casserole. Yep, your favorite warm sandwich but in casserole form and laced with juicy tomatoes. Swoon.
More in a chicken comfort food kinda mood? How about some Chicken Pot Pie, but instead of a pie crust it is topped with a mashed potato crust. Packed with veggies and creamy dreamy flavor…yes please and thank you!
This week’s light meal is one of my slow cooker favorites…a slow cooker chicken barley soup. Just pop everything in your slow cooker in the morning, and voila! Dinner is ready and waiting at the end of the day.
And for dessert, I decided to celebrate National Apple Month with one of my absolute favorite old fashioned apple recipes, and that is my Grandma’s Apple Brown Betty. It’s like a warm sweet hug in a bowl.
