This week’s meal planner includes a recipe for a Shepherd’s Pie Soup and some delectable Peanut Butter Fudge Treats!
Hi friends and happy November!
In my house, the Christmas three ring circus is about to begin, even though I do have a lone turkey statue that valiantly tries to do his part for Thanksgiving.
Not you. 🐾
If you want to get directly to this week’s recipes, just scroll on down to the bottom. But if you want some color commentary on why I picked what I picked, read on!
Well, November is (you can’t make this stuff up folks) National Peanut Butter Lover’s Month and National Sweet Potato Awareness Month. I am aware and in love with both of these things, so I’ll be sharing recipes for both throughout the month – along with some Thanksgiving ideas, of course!
Let’s start with being aware of our sweet potatoes…I like to appreciate them in a recipe for Sweet Potato Gnocchi with Walnuts and Spinach. Gnocchi is super fun to make, especially when you get the kiddos involved.
As for the peanut butter loving, I’m hoping you will love this recipe for Peanut Butter Fudge Treats. A crispy marshmallow bottom layer topped by both peanut butter and chocolate fudge. I’d put this on my holiday cookie list pronto!
Back at the main courses, I have a Chicken Marsala that is for the non-mushroom lovers out there. Yep, I replaced the classic mushroom part of this recipe with (you will be so shocked)…BACON. #SorryNotSorry.
My seafood supper this week is Chopped Shrimp and Grits, a version of this Southern favorite that lets you easily spoon up both grits and shrimp in every creamy bite.
If you have an especially busy day this week, I recommend pulling out your slow cooker in the morning and tossing in the ingredients for a hearty Beef Barley Stew…at the end of the day dinner will be ready and waiting for you!
And last but not least, our light meal this week is a warm and comforting Shepherd’s Pie soup that I am planning to make on the regular this winter. Beef and veggies and mashed potatoes transformed into a comfort food soup. YUM.
As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)
And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own favorites – or just do takeout!
You can always find our previous menus here, in case you want to mix things up!
Meantime, happy cooking!
