This week’s meal planner includes some super simple recipes (yes, including dessert!) that will get you through those hectic days before Thanksgiving!

Hi friends! THE THANKSGIVING COUNTDOWN IS ON!
And as it turns out, folks are still going to expect dinner on these next few days before Turkey Day, and in case you are up to your elbows in pie crust the way I am, this week I am sharing some of the easiest recipes I know.
As in, they will get you in and out of the kitchen during the pre-Thanksgiving days as quickly as possible, OR you can hand them off to whomever your Assistant Cook is and they will do just fine. Here’s mine…

To start, I have a Ham Steak with Apples that is all kinds of autumn-y, and is ready in about 15 minutes. Microwave a bag of trimmed green beans and you are golden!
Next up, a One Pot Parmesan Pasta, because goodness knows we are going to have enough pots to wash later in the week (and bonus points, this is always a fave with the kiddos).
Speaking of the kiddos, another easy kid-friendly supper is the always popular Chili Mac! Despite its name, it has a scrumptious mild flavor, and works some protein into dinner.
If you like your chili on the sassier side, I have a Cornmeal Beer Chili that is also a snap to make. And if you put both on this week’s menu, I don’t think you are going to get any complaints.
Our light meal this week is a warm and comforting Slow Cooker Chicken Tortellini Soup. It’s one of those suppers that slow cooks itself all day long, so when you get to the end of that long day, dinner is just about ready!
And last but not least, dessert! My 1000% easiest dessert is a little number that I call Ridiculously Easy Peach Crumble. You’ll see why.
