Ingredients

Scale
  • 2 tablespoons grainy mustard
  • 4 tablespoons maple syrup, plus extra for drizzling
  • 3 tablespoons olive oil
  • ¼ teaspoon black pepper2
  • 2 four ounce tuna steaks, about one inch thick
  • ½ cup fresh bread crumbs
  • Chopped fresh parsley for garnish

Instructions

  1. Put mustard, maple syrup, 1 tablespoon olive oil and black pepper together in a small bowl and mix well with a fork.
  2. Brush the mustard mixture on to both sides of the tuna steaks.
  3. Pour one tablespoon of olive oil into a heavy frying pan (cast iron is perfect for this if you have one) and heat the pan over medium high heat. Toast the breadcrumbs until they are golden brown, stirring frequently.  Scoop them out and set aside.
  4. Pour the last tablespoon of olive oil into the skillet and heat over high heat until the oil is smoking. Add the tuna steaks and sear for 1-2 minutes per side for rare to medium rare.
  5. Remove steaks and slice. Drizzle with a teeny bit more maple syrup, garnish with bread crumbs and parsley and serve!
