I do love me some hummus! And so does the Southern husband – if you ask him, I’m betting that he would say my speedy recipe for Five Minute Hummus would be in his top ten out of all the recipes on this site.
What is hummus, anyway?
Hummus is a creamy Middle Eastern dip made out of pureed cooked chick peas, olive oil, lemon juice, garlic and tahini (otherwise known as sesame seed paste). It’s a snap to make at home, but you can also find it in your supermarket, usually near the dairy section.
And while I am a-ok with scooping it up just as is with a pita chip or a celery stick, I’m also always looking for ways to make a more Official Meal out of it.
Because if the pure deliciousness wasn’t enough, it’s also pretty good and good for you! Which works out well for me at the moment because we are just back from our regular summer Vermont vacation.

But getting back with the healthy eating program should also be scrumptious, and so I am all about these hummus bowls!
Here’s how to make Mediterranean Chicken Hummus Bowls!
Take a cup of your favorite hummus – here is mine! – and divide it between two bowls, spreading it out into a circle.
Scatter some cooked shredded chicken, cooked green beans, crumbled feta cheese, halved cherry tomatoes and a few capers between on top of the hummus.
(Pro tip: if you don’t have any of your own cooked chicken on hand, a rotisserie chicken works great for this recipe.)
Drizzle it all with a little olive oil and balsamic vinegar. Grind some fresh pepper on top and serve it up!

You can definitely make the components ahead of time (cooking the chicken and the green beans for example) but you should assemble it right before you serve it, which will only take you a few minutes.

- 1 cup prepared hummus – any kind!
- 1 cup cooked shredded chicken
- 1 cup green beans, cooked
- ½ cup feta cheese
- ½ cup cherry tomatoes, halved
- 1 tablespoon capers
- Olive oil for drizzling
- Balsamic vinegar for drizzling
- Fresh ground pepper
- Divide hummus between bowls, spreading it out into a circle.
- Divide chicken, green beans, cheese, tomatoes and capers between bowls, scattering them all on top of the hummus.
- Drizzle with a little olive oil and balsamic vinegar. Grind some fresh pepper on top and serve!
