This week’s meal planner includes a few easy recipes to help celebrate Cinco de Mayo, a delicious way to kick off summer salad season…and Cookie Truffles!
Well, hello there, beautiful month of May! Time to fire up the grill, break out the fresh local fruits and veggies, and this week, celebrate Cinco de Mayo!
AND, May 2nd is National Truffle Day. I’m not sure if they have the mushroom variety or the chocolate variety in mind, but I’m going with chocolate and one of the easiest and most popular recipes on the blog…Cookie Truffles!
Next up is May 5th, also known as Cinco de Mayo, also known as the day we are pretty much required to eat scrumptious Mexican food. I’m suggesting this Easy Beef Taco Casserole or these Slow Cooker Creamy Chicken Tacos. Or both!
It’s also National Burger Month, so I’ll be rolling out some of my favorite burger recipes over the next few weeks. This week I’ve got some Nacho Cheeseburgers for you in case you feel like spreading out the Mexican vibe a little more.
Speaking of local veggies, do you know about leeks? They are one of the first veggies of the spring, and I always grab some immediately to make a leek and bacon pasta dish to commemorate the Arrival Of Spring Veggies.
And last but not least, May is National Salad Month. (Who decides these things? I have no idea, but I’m going with it). So how about a good and good for you Guacamole Tuna Salad?
As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)
And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own faves – or just do takeout!
