This week’s meal planner includes easy recipes to help celebrate both National Barbecue Day and Chocolate Chip Day, another delicious way to celebrate National Burger Month…and one of my favorite pasta comfort foods!

Hi my friends, and here comes our meal planner for the third week of May!
We have two Very Important Days coming up this week, starting with tomorrow, which is National Chocolate Chip Day! And while I am all for whipping up a batch of cookies (this recipe is my current fave), I’m voting for celebrating with some Creamy Peanut Butter Chocolate Chip PIE.
The very next day is National Barbecue Day. Now that I am a full-fledged citizen of North Carolina I fully understand the strong feelings folks have about what makes the best barbecue, and I’m avoiding that entire controversy by suggesting my completely inauthentic but one million percent scrumptious Barbecue Casserole. TRUST ME.

It’s still National Burger Month, and if you’ve never tried steamed cheeseburgers, now is the time! Tender, melty cheesy deliciousness.
For all you seafood lovers out there, can I interest you in this super easy Mustard Lime Roasted Salmon? Salmon is one of the healthiest, easiest fishies to make, and this spicy little number is one of my salmon faves.
Or if you are in a pasta mood – or if you just need some serious comfort food – some Pasta with Buttered Egg sauce is just the ticket.

And last but not least, our Light Meal of the week are my Egg In A Hole BLT Sandwiches. It’s like a mash-up of breakfast and lunch, and I will happily eat one of these babies any time of day.
As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)
And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own favorites – or just do takeout!
