This week’s meal planner includes a few easy recipes to help celebrate both National Egg Day and National Cheese Day…and one of my favorite ways to grill up a tender steak!
Hi my friends, and here comes our meal planner for the changeover from May to June (why do spring and summer fly by so fast?) If you want to get directly to this week’s recipes, just scroll on down to the menu line-up at the bottom.
But if you’d like some background color commentary here goes! We have two Very Important Days coming up this week, starting with June 1, which is National Egg Day!
And I bet you were guessing that I would be coming at you with a breakfast recipe, but nope! I have a delectable Crustless Bacon Cheddar Quiche that is one of my favorite ways to work eggs into supper.
(Oh, and if you are looking for even MORE egg deliciousness, here’s a round-up of ten of my faves!)
Next up, NATIONAL CHEESE DAY, which is on June 4th. If I’m being honest, every day is National Cheese Day for me, but this calls for some extra celebration. As in Baked Camembert Pasta…it’s like a swanky version of mac and cheese.
I know you are getting your grill up and running for the summer, so I wanted to offer up my Buttermilk Grilled Steak recipe – it’s amazing how tender a buttermilk bath can make a steak.
And in case you would rather cook inside, I have a Chicken Diane recipe that is one of the Southern husband’s faves.
Our Light Meal of the week is the classic Shrimp Louie Salad, an old-timey favorite cool and scrumptious seafood salad that also has eggs – double win.
And you know I didn’t forget dessert! I’m not usually the world’s biggest coffee fan, but I make an exception for this melt in your mouth Coffee Banana Bread. Because I don’t know about you, but I always have some ripe bananas lounging around the kitchen.
As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)
And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own favorites – or just do takeout!
