This week’s meal planner includes recipes for a hearty summer ham salad and a recipe for Drunken Steak! Plus one of my favorite ways to use those sweet summer blueberries.
Hi my friends, and here comes your meal planner for the upcoming week!
If you want to get directly to this week’s recipes, just scroll on down. But if you want some color commentary on why I picked what I picked, read on!
Can you believe it’s already almost the end of June? Summertime, you go so fast…and I am determined to get the most out of all the local herbs and fruits and veggies.
And one of those ways is with a flavorful Tomato Basil Chicken Milanese, which sounds all fancy but is really one of the quickest ways I know to get a scrumptious chicken dinner on the table.
And because it’s, well, HOT outside, my crew is getting some salad suppers on the regular, including this hearty Southern Cornbread Ham Salad. YUM.
You know I wouldn’t leave you without a pasta recipe for the week, and lately we are loving this recipe for Ravioli with Baby Spinach and Bacon. It’s ready in 15 minutes…how delicious is that?
Also on the menu is one of my faves…Drunken Steak. I’ll just leave it at that and let you take a look at the fun that one involves.
Our light meal this week is Grilled Shrimp Rolls, because I know your grill is open for business at this point – this recipe always makes me think I am at the beach, even if I’m really only in my own screen porch.
And last but never least, dessert! Give this Blueberry Molasses Snack Cake a whirl and take advantage of those lovely local blueberries that are starting to show up. And here’s everything you need to know about blueberries in our All About Blueberries post from last week (complete with more blueberry recipes!
As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)
And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own favorites – or just do takeout!
You can always find our previous menus here, in case you want to mix things up! Meantime, happy cooking!
