SO many things to celebrate during this fourth month of June, and the most important is Father’s Day! Which is tomorrow, so you still have lots of time to put together a menu that will make everyone’s eyes light up, especially your dad’s.
One of the Southern husband’s faves is a thick, juicy Tavern-style burger, so of course I’ve put that at the top of the menu…and instead of the light meal I usually share, I’m offering up some Pancake Batter Onion Rings, because June 22 is National Onion Ring Day, and we need to celebrate.
And On June 25 we have…National Strawberry Parfait Day! I have a speedy no-cook version of this cool and light summer dessert (and if you need some help wrangling your strawberries, here’s my All About Strawberries guide from a couple of weeks ago).
Back on the regular menu, I have a couple of main courses that are perfect for these sizzling first days of summer.
My basil is going bananas, and one way I like to use it up is in a flavorful Caprese Chicken Salad (and if you are familiar with Caprese recipes, you know that some cheese and tomatoes are coming your way!)
A Cool Chicken Noodle Salad is sure to be a hit with the kiddos…all the flavors of your favorite chicken soup, but in a summer-ific pasta salad form.
And last but not least, if you are in a seafood mood, the only thing that the Southern husband loves as much as scallops is a quick Pan-Seared Red Snapper.
It’s on the stove for a split second, so it’s a great way to serve a proper supper without steaming up the kitchen.
As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)
And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own favorites – or just do takeout!
