We have two Very Important Dates to celebrate this week, starting with Peanut Butter Cookie Day on June 12. My mama’s super easy peanut butter cookie recipe is my all time favorite, so I’m sharing that one as our dessert of the week!
And On June 15 we have…National Lobster Day! I’ve already shared my current top lobster post with you recently, my beloved Lobster Pasta! So I’m letting another of our lobster faves take center stage this week…I’m talking an easy peasy Lobster Frittata. I heart lobster!
Also on the main meal menu this week is my sweet daughter’s favorite recipe from the blog (well, if you don’t count Creamy Mac and Cheese), and that is Steak Frites. Otherwise known as tender grilled steak with skinny fries on the side. Swoon!
And if you are in more of a chicken mood, I’ve got some Chicken Stroganoff for you (and me being me, I left out the mushrooms.)
Thinking pasta? I have some Ravioli with White Wine Tomato sauce for you, and this one takes advantage of those cherry tomatoes that are starting to pop up.
Last but not least, our light meal of the week is something that I am making this very night for the Southern husband and myself…a cool and quick Pineapple Shrimp Gazpacho! It’s a light and lovely chilled soup, and perfect for the hazy hot and humid weather we have going on right now.
As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)
And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own favorites – or just do takeout!
