This week’s meal planner includes a few easy recipes that are perfect for hot summer days when you don’t want to heat up your kitchen!
Hi my friends, and here comes our meal planner for the first full week of June! If you want to get directly to this week’s recipes, just scroll on down. But if you want some color commentary on why I picked what I picked, read on!
SO EXCUSE ME, but down here in sultry North Carolina Mother Nature has decided to bless us with a whole string of 90 degree and then some days. When this happens, I am all about the slow cooker (no hot oven! No hot stovetop!) and cool dinner salads (no hot anything!)
I’m also currently all about the blueberries, which are coming into season and which I try and incorporate anywhere I can. I heart blueberries.
But first up, just in case it isn’t a million degrees where you are, I want to share my Rosemary Peppercorn Chicken recipe. Fresh rosemary is also in season, and I love this sassy supper where the pepper gets pounded into the chicken for a little naughty snap of flavor.
My slow cooker is definitely my favorite “don’t heat up the kitchen” device, and who wouldn’t love a Slow Cooker Hawaiian Barbecue Sandwich for supper? Extra points for serving it up with those Hawaiian Rolls we all know and love.
As for the salads, I love a cool and hearty Shrimp Potato Salad for steamy summer suppers, and for a lighter meal, a Classic Bistro Salad with egg and bacon and lettuce and an ooh-la-la vinaigrette dressing. YUM!
Oh, and since some of us can’t live without pasta once a week (raises hand!), I have a Pasta with Ricotta Tomato Sauce that is super quick and super scrumptious.
And you know I didn’t forget dessert! Blueberry Boy Bait is a classic old-timey snacking cake that is a great way to welcome home that first box of local blueberries (and if you want to plunk some vanilla ice cream on top, I won’t tell!)
As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)
And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own favorites – or just do takeout!
