Hi my friends, and here comes your meal planner for the upcoming week!
We have only one food holiday this week but boy is it a good one…more on that in a sec! If you want to get directly to this week’s recipes, just scroll on down. But if you want some color commentary on why I picked what I picked, read on!
First up, I don’t know how things are by you, but we are sizzling away out here in the North Carolina countryside (I know, I knew this going in so I am FINE with it) but on the bright side, it’s giving me the chance to sprinkle in some cool suppers along the way.
Starting off with a Chicken Hummus Bowl that I am crazy about…especially because it gives me yet another excuse to whip up some of my 5 minute hummus (seriously – 5 minutes!).
Also on the lighter side of supper, I have some Flaked Salmon and Sesame Noodles for you…salmon is so good and good for you and roasts up super fast in the oven. And I could eat sesame noodles for breakfast, lunch and dinner, so I love this combo.
If you feel like cranking up the grill, you are going to love this recipe for Steak and Cherry Tomato Skewers…throw together a Wedge Salad on the side and you have a restaurant-quality dinner waiting for you.
Last up for the main meals is one of my oldest and dearest recipes, an easy peasy Lemon Chicken Pasta. It’s exactly what it sounds like and is a family fave.
This week’s light meal is one of my lunchtime faves, and that is Torn Egg Salad. It’s a spin on classic egg salad and I tend to serve it over grits, but it’s also wonderful over torn lettuce.
And now for this week’s food holiday, which is (drumroll please)…July 17th, National Ice Cream Day! We are REQUIRED to eat ice cream on this day of days, and I recommend this Peanut Butter Cup Pretzel Ice Cream Cake (don’t worry, no ice cream maker needed!).
As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)
And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own favorites – or just do takeout!

As I was making your Lemon Chicken Pasta, I thought it seemed familiar. Then I realized that it’s very similar to Ina’s Scampi recipe – my favorite shrimp recipe. I used some leftover Herbed Chicken which was perfect for this recipe. And it gave me a chance to use some of my parsley which is thriving in this heat.
