July Week 1 Meal Planner!

This week’s meal planner includes recipes for a both a Fourth of July feast, and for National Chocolate Day!

Hi my friends, and here comes your meal planner for the upcoming week! Our first meal planner of July!

If you want to get directly to this week’s recipes, just scroll on down.  But if you want some color commentary on why I picked what I picked, read on!

I’m sure you are all set for your festive Fourth of July eats, but just in case, I have a few ideas for you!

First up, in addition to being Independence day, the Fourth is also National Barbecued Spareribs Day!  So you know I gotta go with my dad’s ever popular recipe for Coca-Cola Ribs.  They are hands-down the best ribs I’ve ever tasted.

And July 6th is National Fried Chicken Day!  You can celebrate with a batch of these Buttermilk Fried Chicken Tenders.  What IS it about a warm chicken tender that makes them so dang irresistible?

The other seriously important food holiday this week is on July 7 (also my sweet nephew’s birthday!), and that is National Chocolate Day.   Personally, I think we should all get this day off.  So this week’s dessert?  A batch of Chocolate Haystack Cookies that require zero baking.  Happiness!

Rounding out the main course for this week I have a lovely Pasta with Clam Marinara sauce that reminds me of the shore, and Dijon Shrimp Scampi that is super flavorful and cooks up in a flash!

And our light meal of the week?  Chicken Caesar Wraps!  (After my post last week about Sheet Pan Chicken Caesar Salad, I can’t get that vibe out of my mind.)

As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)

And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own favorites – or just do takeout!
