Instant Pot Cream Cheese Mashed Potatoes

This easy recipe for creamy, dreamy Instant Pot Cream Cheese mashed potatoes frees up your stove for the main dish!

Instant Pot Mashed Potatoes

We are down to the Final Thanksgiving Countdown around these parts, and even though ours is going to be a little smaller these days, we are still going to celebrate with all the faves.

Turkey.

Pie.

The Southern daughter snuck mac and cheese onto the menu.

And OF COURSE, creamy, dreamy mashed potatoes.

Thanksgiving tends to be a time when every oven and every stove burner is in use, so in addition to be heavenly and swirled with butter and cream cheese, these potatoes also cook up in your Instant Pot!

Meaning that is just one less pan you need to watch on the Big Day!

In other exciting news in our house, we had a little television action going on! The folks from Spectrum1 News in our area heard about the magic that our organizing friends at Peace in Place did when we moved in, and wanted to see that magic in action!

Lindsay and her team had already unpacked 99% of our house (and one of these days I’m going to share some of that magic with you!) but there were still two things that I was longing to have wrangled under control.

The first was my studio desk drawers. This is where I keep all the various plates and napkins and forks and things I use to take my food pictures…and let’s just say it was an out of control jumble.

So Lindsay and Lee got to work, with the cameras rolling…

…and before long it looked like this!

For the first time in my food blogger life, I can actually see all my plates and bowls and cloths and utensils. I was weepy with happiness.

The other big item Lindsay tackled was my fridge. We are still waiting on some finishing touches and then I will share, but let’s just say it is now the Fridge Of My Dreams.

So I have yet another thing to be thankful for, and that calls for discussing Thanksgiving side dishes!

Here’s how you make Instant Pot cream cheese mashed potatoes!

Cut 2 pounds of Yukon Gold potatoes into quarters (you want the pieces roughly the size of a golf ball).

Put the potatoes, 1 cup of chicken broth, 2 tablespoons of butter and a pinch of salt into your Instant Pot.  Lock the lid, close the vent and press Manual.  Set the time for 10 minutes.

When the time is up, let the pressure release naturally.  

When the pressure has released, open the pot and mash the potatoes with a potato masher.  

Add little more butter, ¼ cup of milk and 2 ounces of cream cheese and mash again until they are mashed the way you like them.  Scoop them out and serve them up!

Ingredients

  • 2 pounds Yukon Gold potatoes, scrubbed but not peeled (see note)
  • 1 cup chicken broth
  • 4 tablespoons butter
  • ½ teaspoon salt
  • ¼ cup milk
  • 2 ounces cream cheese

Instructions

  1. Cut the potatoes into quarters (you want the pieces roughly the size of a golf ball).
  2. Put the potatoes, broth, 2 tablespoons butter and salt into your Instant Pot. Lock the lid, close the vent and press Manual.  Set the time for 10 minutes.
  3. When the time is up, let the pressure release naturally. When the pressure has released, open the pot and mash the potatoes with a potato masher.  Add the remaining butter, the milk and the cream cheese and mash again until they are mashed the way you like them.  Scoop them out and serve!

Notes

Leaving the peels on makes for more texture in your mashies.  If you like your mashed potatoes smooth, go ahead and peel them, but then do try this recipe for potato peel chips!
