Hi my friends!  Well, one of the things I have learned rapidly since becoming a North Carolinian is that it is HOT HOT HOT down here in the summer.  And humid.  And hot.

My new-found curly hair is loving it, but the rest of me is extremely grateful for both air-conditioning and the fact that the Southern daughter immediately introduced me to Truly Lemonade Hard Seltzer, which is basically a combo of lemonade and seltzer and a little bit of some kind of booze.

It’s light and bubbly and just the ticket for a sultry summer evening, but of course I always need to do my own version of things, and in my version of things there is no seltzer, which is the only thing I don’t completely love about the 134,058 cans of Truly that are now in the pantry.

So I present to you my newest mixology adventure, otherwise known as an iced lemonade cocktail! Obviously just for the grown-ups – here’s my favorite take on lemonade for the kiddos – so grab yourself a lemon and let’s go!

Here’s how you make yourself an iced lemonade cocktail!

Scrape the peel (otherwise known as the zest!) off of that lemon.  Here’s my favorite gizmo for doing that!

Once the peel is off, squeeze all the juice out of it (and here’s my favorite gizmo for doing THAT.)

You can do both of these things right into your handy blender.  Next, add ½ cup sugar, 1 cup water, 10 ice cubes and ½ cup of your favorite vodka into the blender and blend on high until nice and smooth.

Click to TweetMeantime, pour a little sugar into a saucer or a dish, dip the rims of two glasses into water, then into that sugar.  Sugaring the rims is optional but Oh So Good.

Fill those glasses with ice, pour the lemonade cocktail into the glasses, garnish with a sprig of mint and say cheers!

(And join me in toasting whomever it was that invented air conditioning!)

Ingredients

  • Juice and zest from one lemon
  • ½ cup sugar, plus extra for the rim
  • 1 cup water
  • 10 ice cubes, plus extra for serving
  • ½ cup vodka
  • Fresh mint for garnish

Instructions

  1. Place the lemon juice and zest, ½ cup sugar, 1 cup water, 10 ice cubes and ½ cup of vodka into your handy blender and blend on high until smooth.
  2. Dip the rims of two glasses into water, then into some sugar.
  3. Fill glasses with ice.
  4. Pour the lemonade cocktail into the glasses, garnish with mint and say cheers!
