Fried Parmesan Chicken

This easy recipe for fried parmesan chicken adds a little cheese to coating for a flavorful and fun spin on your chicken dinner!


  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese, plus extra for garnish
  • 1 tablespoon dried oregano
  • Sea salt and freshly ground pepper
  • 3/4 cup flour
  • 2 large eggs, beaten to blend
  • 1 ½ pounds skinless, boneless chicken cutlets, about 1/4” thick
  • 8 tablespoons canola oil


  1. Preheat oven to 200 degrees (this is to keep the chicken warm while you cook it in batches).
  2. Combine the breadcrumbs, ½ cup Parmesan cheese, oregano and a pinch each of salt and pepper in a shallow bowl or pie plate.
  3. Put the flour in a second bowl and the beaten eggs in a third.
  4. Dunk the chicken cutlets in the flour, shaking off any excess. Now dunk in the eggs, and lastly dunk in the Parmesan mixture, pressing the Parmesan crumbs on so the chicken has a nice coating.
  5. Heat half the canola oil in a heavy large skillet over medium high heat. When the oil is hot, add half of the chicken and cook until golden brown, about 4 minutes per side.  Pop the cooked chicken on to a cookie sheet and into the oven to keep warm while you do the rest.
  6. Divide among plates, sprinkle with a little more Parmesan and serve!
