I know, you are probably expecting some tomato sauce and some mozzarella cheese with this one, but SURPRISE! While I love and adore chicken parm as much as the next girl, this recipe is actually a spin on good old fried chicken cutlets.
The X Factor with this one is that we are going to invite some Parmesan cheese to the party, both in the breading and sprinkled liberally on top, so that you have a glorious Parmesan crusted chicken breast starring in the main role on your supper plate.
Not only is this a fun way to shake up your chicken, but it’s ready in under a half hour, which makes it equally perfect for a hectic weeknight or a leisurely dinner party.
Ingredients You need to Make Fried Parmesan Chicken!
- Bread Crumbs
- Parmesan Cheese
- Oregano
- Salt and Pepper
- Flour
- Eggs
- Chicken
- Canola Oil
Pro Tip: When you are wanting to fry something up over high heat the way we are about to do, canola oil is always your best bet because it has a low smoke level. Save that tasty olive oil for your next salad instead!
Here’s How To Make Fried Parmesan Chicken!
STEP 1: Preheat oven to 200 degrees (this is to keep the chicken warm while you cook it in batches).
STEP 2: Combine a cup of panko breadcrumbs, ½ cup Parmesan cheese, a tablespoon of oregano and a pinch each of salt and pepper in a shallow bowl or pie plate.
STEP 3: Put ¾ cup of flour in a second bowl and a couple of beaten eggs in a third.
STEP 4: Dunk the chicken cutlets in the flour, shaking off any excess. Now dunk in the eggs, and lastly dunk in the Parmesan mixture, pressing the Parmesan crumbs on so the chicken has a nice coating.
STEP 5: Heat a quarter cup of canola oil in a heavy large skillet over medium high heat. When the oil is hot, add half of the chicken and cook until golden brown, about 4 minutes per side. Pop the cooked chicken on to a cookie sheet and into the oven to keep warm while you do the rest.
STEP 6: Divide among plates, sprinkle with a little more Parmesan and serve!
More Tips for Making Fried Parmesan Chicken!
Yep, as long as they are dried. We love fresh breadcrumbs, but we want the crunch factor for this recipe.
Yep! Just make sure they are boneless, and you might have to cook them a little bit longer…the best way to check for doneness is a meat thermometer, which should be at 165 degrees for chicken.
