Egg In A Hole BLT Sandwiches

I think this might be one of my favorite sandwich brainstorms EVER. We all know I am a BLT sandwich fan, because BACON, among other things.

And I am always happy to pop a soft cooked into pretty much anything (I’m looking at you, ramen soup), including a BLT sandwich.

But I also do love me a comfort food egg in a hole, which basically involves soft cooking an egg inside a slice of bread.

So…so…what if you combined all of that together?

Bread that has a soft cooked egg in the center of it, along with sweet tomatoes and creamy mayonnaise and crunchy lettuce and a generous amount of crispy bacon?

I KNOW. I KNOW.

So I’m gonna walk you through how all that deliciousness can happen in your kitchen, but first an update on our Southern adventure.

We are one week away from getting the keys, so things are getting real at the Carolina Dream House!

The most dramatic developments lately have been on the outside. Including grass!

And just to explain, we thought it would be nice to have a pretty gathering of plants out in front, so that open patch there is soon going to be full of holly trees and wild grasses and I think some flowers.

And speaking of flowers, we put some butterfly bushes out back and 3 seconds later this happened…

…proving that they totally live up to their name!

In other news, the Southern husband and I went out for a burger for the first time since March, and did our socially distanced duty by eating outside even though it was approximately 4 million degrees outside.

It was our first time at Culvers, which was highly recommended to us by our kids and their friends.

We both had a butter burger which is just as delectable as it sounds, and I was understandably chided both in person and on Instagram for not having the fried cheese curds. Or the frozen custard.

NEXT TIME.

Meantime, let’s cook up a scrumptious sandwich!

Here’s how you make egg in the hole BLT sandwiches!

Get yourself some nice substantial country-style bread and cut a 2 inch round hole in the center of four bread slices (a cookie cutter or a juice glass works well for this).

Next, cook the bacon in a large skillet over medium high heat until it’s nice and crispy.  Scoop it out but save those drippings!

Now pop four more bread slices into the skillet with the drippings and cook them up until one side is browned. Take ’em out.

Pop the bread slices with the holes into the skillet with the drippings and break an egg into each hole.  Cover the skillet and cook until eggs are set, about 4-6 minutes.

Time to assemble!  Spread the untoasted half of the first bread slices with mayonnaise.  Top with lettuce, tomato and two bacon slice halves.  

Place the bread and egg slices on top, toasted side up.

Now serve them up, giving your lucky sandwich eaters napkins and a knife and fork – these babies can be deliciously messy!

Description

Two of your lunchtime favorites meet up in this delectable egg in a hole BLT sandwich recipe! Delicious for brunch, lunch or supper.


Ingredients

  • 8 slices of country style bread
  • 4 slices of bacon, cut in half
  • 4 eggs
  • 8 lettuce leaves (we like baby romaine or butter lettuce)
  • 1 large tomato, sliced
  • 2 tablespoons mayonnaise

Instructions

  3. Place the bread slices without holes in the skillet with the drippings and cook until one side is browned. Remove from skillet and set aside.
  4. Place the bread slices with the holes in the skillet with the drippings and break an egg into each hole. Cover the skillet and cook until eggs are set, about 4-6 minutes.
  5. Time to assemble! Spread the untoasted half of the first bread slices with mayonnaise.  Top with lettuce, tomato and two bacon slice halves.  Place the bread and egg slices on top, toasted side up.
  6. Serve, giving your lucky sandwich eaters napkins and a knife and fork – these babies can be deliciously messy!

    Ahhhhhh! A comfort food sandwich. Love it! And after the week I had last week, I need all the comfort food. A rare in-land hurricane called a Derecho swept through the state of Iowa with winds over 100 mph. In hurricane-speak, this would have been a category 3 hurricane. Same as Sandy from a few years back. Trees, power lines and poles down, crops completely gone, buildings destroyed. We were lucky and were only without power for two days. There are folks in some areas of the state that won’t see power for another couple weeks due to the damage. But most of the country is unaware this even happened as the major news outlets have ignored it. So keep the comfort food coming!
