Happy July, everyone – can you believe we are already in the heart of summer?  Picnic season, eating outside season, vacation season (even if this year it might be a stay-cation), and in our house, CORN DOG SEASON.

And speaking of July, this just might be the month that the Carolina Dream House is finished!  One of the biggest reveals this week was the outside fireplace on the verandah.

I. AM. IN. LOVE.  We are planning on plunking a couple cozy chairs and a sofa out there, and see that gadget in the upper left part of the picture?

That’s a heater, so if I want to drink red wine hot chocolate on the verandah in January, between that baby and the outside fireplace I figure I am good to go!

But meanwhile it is July, and the perfect time for this almost-too-easy-to-be-called-a-recipe for these cute little corndog bites.

Corndogs always remind me of our fun times roaming around the Connecticut State Fair with our friends Janet and Bruce, and so of course I have a recipe for the full-size version for both sentimental and corn dog love reasons, but I recently felt a need to make cute little bite-sized ones as well.

And I have to admit, I started by making my own cornmeal batter, which works perfectly on the regular sized corn dogs.  But in the first round of testing, that batter was just a little too dense for these little bites.

So the next time around I turned to this old friend…

Yep.  My good old box of Jiffy corn muffin mix.  I’m all for making things from scratch, but here and there things like Jiffy and Bisquick are just the ticket, and in this case it gave me the light, slightly sweet cornbread coating these babies needed.

Here’s how you make corn dog bites!

Preheat your oven to 375 and spray a 24 serving mini muffin pan with cooking spray.  Now grab that box of Jiffy (you can find it in the baking aisle of your supermarket and mix it up with some milk and an egg until it is just combined.

Take a teaspoon and fill the muffin tins 1/3 full with the batter. Pop a hot dog section in each of the muffin openings and then cover with batter, leaving a little room at the top because the batter is going to rise.

Bake them up for 15 minutes, and then let the corn dog bites cool for a few minutes before taking them out of the pan.  I like to tilt them a little, which keeps the bottoms and sides nice and soft.

(This does encourage corn dog bites pilfering.  You know who you are.)

I like to serve them up with some ketchup and mustard for dunking…

…but you can also just put them in a bowl and watch them fly.  So if you are still considering your Fourth of July options (and by the way, here’s a round-up of my July 4th faves), you can’t go wrong with corn dogs of any kind.

Ingredients

  • One 8.5 ounce package Jiffy corn muffin mix
  • 1 egg
  • 1/3 cup milk
  • 4 hot dogs, cut into 6 pieces each

Instructions

  1. Preheat oven to 375 and spray a 24 serving mini muffin pan with cooking spray.
  2. Put the muffin mix, egg and milk into a bowl and mix until just combined.
  3. Fill the muffin tins 1/3 full with the batter. Pop a hot dog section in each of the muffin openings and then cover with batter, leaving a little room at the top because the batter is going to rise.
  4. Bake for 15 minutes, and then let the corn dog bites cool for a few minutes before taking them out of the pan.
  5. Serve with mustard and ketchup on the side. Yum!
