This dreamy recipe for chicken with bourbon bacon sauce turns your regular chicken supper into a dinner party level meal!

Ingredients

  • 6 slices bacon, chopped
  • 4 boneless skinless chicken breast halves, pounded to ½ inch thickness
  • Salt and pepper
  • 2 shallots, peeled and chopped
  • ½ cup bourbon
  • 1/4 cup heavy cream
  • Chopped fresh parsley for garnish

Instructions

  1. Cook the bacon in a large skillet until crispy. Scoop it out and let it drain on paper towels.  Watch out for bacon pilferers!
  2. Heat the bacon drippings over medium high heat, season the chicken with salt and pepper and add it to the skillet. Cook for about 3 – 4  minutes per side or until an instant read thermometer reads 165.  Scoop them out and set aside.
  3. Add the shallots and stir for about 2 minutes until they start to soften. Pour in the bourbon, give everything a good stir, cover the skillet and let it all simmer for 5 minutes. Stir in the cream.
  4. Return the chicken to the skillet along with any juices and sprinkle in the bacon. Turn the chicken a few times until it is heated through.  Taste the sauce and add salt and pepper as needed.
  5. Divide the chicken among plates, ladle on a generous amount of sauce, garnish with parsley and serve.
