We love French Toast in all shapes and size in my house, and we also love Caprese anything, so I can’t quite figure out what took me so long to put the two of them together, but I finally did!

Is it lunch? Is it dinner? Is it brunch? Who cares, as long as we have some.

What it IS, is a recipe that takes all the best parts of French toast (grilled bread soaked in eggs and milk) and the best parts of Caprese Salad (tomatoes, mozzarella cheese and basil) and marries them into a taste sensation that is going to live happily ever after!

These are the starring players. Whenever I made French toast of any kind, I like to go for a nice soft bread like brioche or challah that is sure to soak up all the milk and egg mixture.

Then we have the tomatoes. During local tomato season, I head directly for the crazily delicious heirloom tomatoes…

They may not be the handsomest tomatoes on the block, but they taste good enough to make you cry happy tears (if you are me!).

I whipped this one up in fresh local tomato season to take advantage of those glorious tomatoes, but cherry tomatoes will work all year round.  Because I think we are all going to want to make this all year round.

And basil. Gotta have fresh basil for this one. I have about 123,296 acres of it at the moment, but off season you can pretty reliably find it in the produce section.

here are all the ingredients you need to make caprese french toast!

  • Milk
  • Dried Oregano
  • Salt and Pepper
  • Eggs
  • Soft Sliced Bread
  • Butter
  • Mozzarella Cheese
  • Tomatoes
  • Basil
  • Balsamic Vinegar

Here’s How To Make the best Caprese French Toast!

STEP 1: Put a cup of milk, a teaspoon of oregano, a pinch each of salt and pepper and 4 eggs eggs into a mixing bowl and whisk it all up briskly until well combined.  Pour the milk mixture into a 9 x 13 baking pan.

STEP 2: Cut 8 bread slices in half on the diagonal and lay them in the pan with the milk mixture for a minute or two, then turn them over so they get to soak up all the liquid.

STEP 3: Heat 4 tablespoons of butter on a griddle or in a large skillet (I always opt for the griddle because I find it easier to flip the bread) over medium high heat until melted. Lay the bread slices on the griddle or skillet and cook until they are golden brown, about 2-3 minutes per side.

STEP 4: Now to assemble!  Put the Caprese French Toast together as follows: Slice of bread, slice or two of cheese, slice of bread, slice or two of cheese until each plate has 4 half slices of bread with cheese in between.

STEP 5: Scatter the cherry tomatoes on top (or if you are using large sliced tomatoes, you can tuck them in between the cheese and bread).

STEP 6: Sprinkle with basil and drizzle with a little balsamic vinegar and serve it up!

Can I use any kind of milk for this recipe?

My milk of choice is usually 2% or whole milk, but 1% will also work fine. The only one I would skip is skim, because it doesn’t have the texture we want for this.

Where do I find challah or brioche bread?

These specialty breads are usually hanging out in the bakery section of your supermarket instead of the bread aisle. And if you can’t find them, regular soft white bread will work just fine.

Can I use shredded mozzarella cheese?

Well technically yes, but fresh mozzarella (usually available in the cheese section of your grocery store) is 1 million percent more flavorful, so try and go for it!

Ingredients

  • 1 cup milk

  • Balsamic vinegar for drizzling

    Just when I thought Caprese could not get any better, along comes this “smoosh up.” As a lover of anything Caprese, I am blown away by this combination. Kudos for thinking outside of the box. I cannot wait to try this outrageously, gorgeously, delicious recipe! 😍
