This easy three ingredient recipe for brown sugar bacon cashews is the perfect nibble with a cocktail!

Tis the season for all those decadent little appetizers that we don’t usually indulge in, but that we always want to have around during the holidays.

Personally, I don’t see how things could get any better than a combo of brown sugar, bacon and cashews. I could eat this for supper along with a nice merlot and be totally, perfectly happy.

(I do know that not everyone would be happy with a bowl of nuts for dinner, and will insist on a full main course.)

Perhaps a nice seafood supper?

One way or the other, I’m here to tell you that this is an easy peasy, sweet and savory little number that you may want to keep on your holiday list!

Here’s how you make brown sugar bacon cashews!

Chop up four slices of bacon, pop it in a skillet and cook until it is nice and crispy.  Scoop it out with a slotted spoon and drain on a paper towel, leaving the drippings in the skillet.

Put 2 cups of cashews and 3 tablespoons of brown sugar in the skillet and stir until the sugar is melted.

Pour the cashews onto a piece of parchment paper or nonstick foil and let them cool.   (After they are cooled you may want to pat them with a paper towel to absorb any excess bacon drippings.)

When they are cooled, mix them with the bacon, pour them into a bowl and watch them disappear!

(And don’t forget to make a second batch for the cook!)

Ingredients

  • 4 slices bacon, chopped into ½ inch pieces
  • 2 cups cashews (salted or unsalted is fine)
  • 3 tablespoons brown sugar

Instructions

    Kate, these look yummy! How do you suggest they be stored – in the refrigerator? I’m assuming that I won’t eat them all at once, but only time will tell.
