This week’s meal planner includes my favorite summer pasta recipe and a Taco Pasta Bowl that is guaranteed to be a family hit!

I’m kicking off this week’s menu with my all-time favorite summer pasta recipe, Pasta with Brie and Tomatoes. There is also basil involved. I just can’t rave enough about this one. If you only pick one recipe this week, pick this one!

More in a seafood kinda mood? We love us some Coconut Shrimp Salad, which is full of tropical flavors and hearty enough to be a supper salad.

I’ve got my chicken lovers covered this week with a sassy Lemon Chicken with Artichokes. You gotta love both chicken and artichokes for this one, and it is perfectly fine to use the frozen ones. So. Good.

One way I can always be sure of enticing my millennial housemates to my supper table is to announce that I am making anything with the word “taco” in it, and so here comes a Taco Pasta bowl for your consideration.

This week’s light meal is one of my favorite sandwiches in the Whole Wide World. It’s officially called a Gatsby Arrow (no idea why) but let’s just say it involves roast beef and some of that Brie cheese you bought for the pasta recipe of the week.

And for dessert, we are baking up some of our favorite cookies. They are called Hermit Cookies, and while they don’t have the show-off personality of, say, Banana Cream Pie Cookies, they are comforting little spice cookies packed with flavor, and I promise your cookie jar will empty out fast.

As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)
And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen.
