I’m kicking off this week’s menu with one of the Southern husband’s faves, and those are Grilled Rosemary Scallops. You use a rosemary stem instead of a skewer, and OH MY GOODNESS the flavor!
More in a chicken kinda mood? One of my most beloved recipes is this One Pan Roasted Chicken And Vegetables. Yep, cooks up all in one pan, and yay for a scrumptious supper with minimal clean-up!
I’ve got my pasta lovers covered this week with an easy Linguine with Creamy Clam Sauce (there is something about clams that transports me (in my mind anyway!) directly to the beach.
If you are in one of those hazy hot and humid areas (raises hand) where you really just want a nice cool supper salad, check out what I modestly call The Best Steak Caesar Salad Ever. Really. It was born after one too many not good enough versions of this when the Southern husband and I were out to lunch one day, and I had to take steak Caesar salad into my own hands. HA.
This week’s light meal is so you can properly celebrate National Zucchini Day on August 8, and that is a cool and speedy Zucchini Gazpacho soup.
And for dessert, we are celebrating National Raspberries and Cream day with a classic recipe called Raspberry Mess. It’s light and sweet and bursting with sweet berry flavor.
As always, we will be sharing another new menu next Saturday morning, full of dinners that feature seasonal ideas and ingredients (and dessert!)
And as usual, I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own favorites – or just do takeout!
