Hi my friends, and welcome to our meal plan for this first second week of April…including some Easter ideas!
This week’s meal planner includes a carrot cake that is an Easter show-stopper! And speaking Easter, if you are looking for an alternative to ham, both Roasted Dijon Chicken and Pasta with Asparagus and Goat Cheese are a couple of springtime options.
If you ARE having ham, make sure you save some leftovers for a Ham, Pear and Brie Casserole. And if seafood is more your style, the Southern husband’s Very Favorite Bacon Scallop Risotto is always a winner in my house.
Last but not least, I know I already shared a round-up of ten grilled cheese recipes for National Grilled Cheese Day on April 12, but I couldn’t resist working a French Toast Grill Cheese into the menu (sorry/not sorry).
As always, we will be sharing a new menu every Saturday morning, full of dinners that feature seasonal ideas and ingredients (and don’t worry, we didn’t forget about dessert!)
And as a reminder, you’ll see that I’m not giving you a recipe for all seven days of the week, because I’m a firm believer in taking a day or two off from the kitchen. This will also give you the chance to work in some of your own faves – or just do takeout!
Second, I’m not assigning specific days of the week to the recipes. And you can always find our previous menus here, in case you want to mix things up!
