Chicken Tot Pie

We all know what this week is all about.  It’s Valentine’s Day, otherwise known as the Southern husband’s favorite holiday!

And while I usually offer up a chocolate recipe on this day of days, this year I am going with a recipe I cooked up recently that the Southern husband immediately anointed as one of his favorites.

(Side note: did you know I have a whole category of his favorites?  Yep.  Because he’s MY favorite.)

Anyway, I decided that instead of chocolate, I was going with this utterly scrumptious, Tater Tot topped chicken pie.

Because that’s what you do for a guy who makes his own gorgeous wooden surfboard and tells you he pasted a picture of you inside it for all eternity.

It’s what you do for a guy who complains on the regular about the squirrels eating out of the bird feeder, but also puts up a special squirrel lunchbox and makes sure it stays full even when that means standing in two feet of snow.

It’s what you do for the guy who cleans up the kitchen and warms up the car and fixes you a cup of tea at the perfect temperature every morning.

Here’s How You Make Chicken Tot Pie!

This is basically your standard chicken pot pie recipe, with a filling of chicken and veggies in a creamy sauce, but instead of topping it with pie crust, we are going to use Tater Tots.

Start by simmering up some boneless chicken breasts (and if you happen to have leftover chicken hanging around the house you can skip this step)!

This easy recipe for Chicken Tot Pie takes one of your favorite comfort food suppers and makes it even tastier with a Tater Tot topping!Click to TweetWhile the chicken is cooking, toast up those Tots in the oven.  Leave the oven on so it is ready when you are ready to bake the pie.

Sauté some carrots and celery and onion  until they are just tender, then add in some flour and seasonings and half and half to make that creamy sauce.

Stir everything together, pour it into a casserole, arrange your Tots on top and pop it in the oven.

Oh my goodness.  Let’s just say that the Southern husband forgot that pie crust ever existed in the world.

Scoop out your chicken tot pie into bowls, making sure everyone gets their fair share of tots, and give them an extra hug just for good measure.

Description

This easy recipe for Chicken Tot Pie takes one of your favorite comfort food suppers and makes it even tastier with a Tater Tot topping!


Ingredients

  • 2 boneless skinless chicken breast halves (or 2 cups cooked shredded chicken)
  • 2 cups chicken broth
  • ½ pound frozen Tater Tots
  • 2 tablespoons butter
  • 1 sweet onion, peeled and chopped
  • 1 cup baby carrots (cut any bigger ones in half)
  • 1 cup chopped celery
  • 1 teaspoon poultry seasoning
  • ¼ cup flour
  • ½ cup half and half

Instructions

  1. Preheat oven to 425 and line a rimmed baking sheet with nonstick foil or a silicone mat.
  2. Put the chicken breasts in a pot. Add one cup of the chicken broth, a pinch each of salt and pepper, and enough water to cover the chicken.  Bring to a boil, then reduce heat to a simmer, cover the pot and simmer until the chicken is cooked through, about 10 minutes (it should read 165 degrees on an instant read thermometer).  Once the chicken is cool enough, shred it up either with your fingers, two forks, or this handy-dandy shredder that we love.
  3. While the chicken is simmering, put the Tater Tots on the baking sheet and cook until crispy, about 15 minutes. Take them out but leave that oven on.
  4. Put the butter in a large deep skillet over medium high heat. Add the onion, carrots and celery and sauté until the carrots are just starting to get tender, about 10 minutes.
  5. Sprinkle on the poultry seasoning and flour and stir until mixed, then pour in the second cup of chicken broth and the half and half. Simmer until it starts to thicken, about 3-5 minutes, and then stir in the shredded chicken.  If it gets too thick, loosen it up with a little more chicken broth. Give it a taste and add salt and pepper as needed.
  6. Pour the chicken mixture into a casserole dish and top it with the Tater Tots. Pop the casserole back into the oven until the chicken mixture is bubbling, about 20 minutes.  Cool for 5-10 minutes and then scoop it out, making sure everyone gets their fair share of Tots!

    Now THAT is some good-looking comfort food! And tater tots are much easier to deal with than pie dough. Thank you, thank you, thank you!     Hubby would love this much better than having the pie crust on top.
    You think using frozen or canned veggies (well drained) would work mixed with a can of Cream of Chicken or Cream of Celery soup?

      Hey there – I do, although I would use 3 cups of the canned soup so that you have enough sauce! :)

        Thank You. It’s just myself & hubby so was planning on just making 1/2 the recipe and using a couple cans of the soup. Once I mix everything up & if I needed more liquid I would had in a little chicken stock as well or adding a bit of milk mixed with the canned soup.

            finally able to get this made today; by putting my own twist on things.
            I used 1-15oz can of Veg-All mixed vegetables; well drained.
            2-10.5 oz. cans of Cream of Chicken Soup
            1 soup can of milk
            2 large boneless chicken breasts; cooked & cubed.
            Mixed everything together and heated it up in saucepan. Once it was god and hot I poured the mixture in my 8×11 casserole dish;(dish that I use when I make a small lasagna) topped with prepared tater tots as stated and put in oven for time stated in your directions. Removed from oven & left it set for a few minutes. It turned out great & was delicious.
            Hubby sure did like it. Ended up having just a small amount left over.
